About the Recipe

Ingredients
1 white onion
1 red bell pepper
1/2 head of garlic
3 large tomatoes or one can of whole tomatoes (preferred is fresh tomatoes as canned foods may contain harmful preservatives)
Spices: paprika, cumin, chili powder, turmeric
3 eggs
Cilantro
Preparation
Step 1
Dice your onion and bell pepper into 2 inch long stripes or 1cm x 1cm chunks. Sautee with olive oil over medium heat until the onions become translucent. Do not use high heat as charred vegetables could potentially contain carcinogenic chemicals called heterocyclic amines (HCAs) and acrylamide (Washington Post).
Step 2
Slice the garlic and add to the pan along with your chosen spices. Stir and let cook for about a minute until the garlic becomes soft.
Step 3
While letting the vegetables and spices cook, cut your tomatoes into chunks in a bowl and squeeze them with your hands to get irregular chunks perfect for simmering (yes - you'll have to get your hands dirty!). You can choose to leave the skin on for extra fiber and nutrients. If using canned tomatoes, they are already at the desired texture.
Step 4
Add the tomatoes to the pan and use a spoon or spatula to break them up into even smaller pieces.
Step 5
Optional ingredients include feta cheese, olives, meat, and spinach. Fold them in for more flavor and nutrients!
Step 6
Once lightly simmering, crack your eggs on top and reduce the heat to low. Let cook for 5-10 minutes or until your desired egg texture.
Step 7
Enjoy with a bread of some sort to soak up all the sauce!
