Ingredientes

  • 8 oz whole wheat or regular pasta (penne, spaghetti, or your choice)

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 zucchini, sliced

  • 1 bell pepper, sliced

  • 1 cup broccoli florets

  • 1 cup cherry tomatoes, halved

  • ½ cup spinach or kale

  • ½ teaspoon Italian seasoning (oregano, basil, thyme mix)

  • Salt and pepper to taste

  • 2 tablespoons grated Parmesan cheese (optional)

  • Fresh basil (optional garnish)

Preparación

Step 1

Cook 8 oz of pasta according to package directions until al dente. Drain and set aside.


Step 2

Heat 1 tablespoon of olive oil in a large pan over medium heat. Add 1 diced onion and 2 minced garlic cloves, cooking until fragrant.


Step 3

Add 1 sliced zucchini, 1 sliced bell pepper, and 1 cup of broccoli florets to the pan. Sauté until slightly tender.


Step 4

Toss in 1 cup of halved cherry tomatoes and ½ cup of spinach or kale. Cook for 2–3 minutes until the greens wilt and tomatoes soften.


Step 5

Add the cooked pasta to the pan. Sprinkle with ½ teaspoon of Italian seasoning, salt, and pepper. Toss well to combine. Step 6 Top with 2 tablespoons of grated Parmesan cheese and optional fresh basil.
